Caprese Salad

This Italian antipasto (starter dish) is easy to make and delicious, especially if you use basil and tomatoes when they are in season. The salad features all the colors of the Italian flag: green, white, and red. Serve it with crusty Italian bread.

  • About 12 fresh basil leaves

  • 2 large ripe tomatoes, sliced into rounds

  • 1/2 pound fresh mozzarella, sliced into rounds

  • 2-3 tablespoons olive oil

  • Salt and pepper

  1. Rinse the basil leaves and pat dry with a paper towel. Pinch off the stems.

  2. Place a tomato slice on a plate. Overlap it with a slice of mozzarella and a basil leaf. Repeat until you have filled the plate.

  3. Drizzle with the oil. Sprinkle with salt and pepper.

Makes 4 servings.
